Sodexo has implemented initiatives encouraging healthier eating for Buena Vista University (BVU) students. See the video above for Chef Eric Gunnare’s explanation of the new food strategies.
Not all students are happy with the new changes though. “The humus is the same every day and many people are getting tired of that taste. Then they go to the unhealthy side,” sophomore Sara Kaiden said. She refers to one of the stations dedicated to healthier options which many days offrs humus and pita bread.
To decrease grazing, there are food stations allowing students and others dining at the servery to receive their full meal at one stop. Also nutrition cards are available to teach people of the healthier options available in everyday life.
